Smothered Whitefish with Caramelized Onions

YIELDS 4 SERVINGS

4 6-OUNCE WHITEFISH FILLETS

SALT TO TASTE

PEPPER TO TASTE

1 TABLESPOON OLIVE OIL

1 CUP CARAMELIZED ONIONS

Preheat oven to 350°F. Sprinkle the fillets with salt and pepper on each side. Place a skillet over medium heat to preheat. Once it is heated, add the oil and the fillets.

Turn off the heat and cover each fillet with 1⁄4 cup caramelized onion. Place the skillet in the oven and cook for 20 minutes. The fish is cooked through when it starts to flake apart. Serve hot.
